CHOCOLATE BEET ROOT CAKE Ingredients 3 oz. semisweet chocolate (1/2 c. chips) 1 c. vegetable oil, divided 1 ¾ c. sugar 3 eggs 2 c. pureed cooked beets 2 c. sifted flour 2 t. baking soda ¼ t. salt 1 t. vanilla (Healthy Option: substitute 1 c. applesauce) (Healthy Option: substitute Splenda) Directions Preheat oven to 375 degrees. Melt chocolate with ¼ c. oil in microwave-proof dish. Cool slightly. Beat sugar and eggs together until light and fluffy. Stir in remaining oil, beets, and chocolate mixture. Beat thoroughly. Sift flour with baking soda and salt. Add to batter. Stir in vanilla. Pour into greased Bundt or tube pan. Bake 60-65 minutes, until toothpick or knife comes out clean. Cool on a wire rack. Remove. Development of Coordinator of Diversity and Recruitment Initiatives Formation of Diversity and Recruitment Committee Revision of the Assistant Dean Position to include DEI under its description Composition of “Diversity & Recruitment Plan” which includes goals, objectives, action steps, partners and measures of achievements for recruiting and retaining a diverse faculty, staff and student population (2018 – 2019). Implementation of the “Diversity & Recruitment Plan” beginning in 2019. Since the plan was created based on a five year timeline, the committee decided to focus on specific tasks each year. The tasks selected were based on immediate need and attainability. Each task had 1-2 leaders to guide the work and report back to the committee. Moving forward, the committee plans to continue implementing the “Diversity & Recruitment Plan.” For the 2022 – 2023 academic year, the committee will focus on 11 tasks. Like we’ve done previously, there are task leaders who are guiding the work and reporting back to the committee. COE Accomplishments As part of its mission and vision, the College of Education (COE) strives to create a learning environment that is inclusive of the diverse needs, interests, experiences of the faculty, staff and students. Moreover, the COE works to build and maintain community partnerships that promote equity for all stakeholders. Diversity & Inclusion

College of Education While the accomplishments focus on the work that the “Diversity and Recruitment Committee” has done, this work could not be done without involvement from the COE leadership team, faculty and staff. Rather than imposing the goals of the plan, the committee has been intentional about seeking input while sharing information about why this work is important. Moreover, this work has been enhanced by the involvement of Dr. Mendoza’s office. While we can identify certain challenges and opportunities within our colleges, it’s important to get a perspective from those outside of our College.
