CHOCOLATE BEET ROOT CAKE Ingredients 3 oz. semisweet chocolate (1/2 c. chips) 1 c. vegetable oil, divided 1 ¾ c. sugar 3 eggs 2 c. pureed cooked beets 2 c. sifted flour 2 t. baking soda ¼ t. salt 1 t. vanilla (Healthy Option: substitute 1 c. applesauce) (Healthy Option: substitute Splenda) Directions Preheat oven to 375 degrees. Melt chocolate with ¼ c. oil in microwave-proof dish. Cool slightly. Beat sugar and eggs together until light and fluffy. Stir in remaining oil, beets, and chocolate mixture. Beat thoroughly. Sift flour with baking soda and salt. Add to batter. Stir in vanilla. Pour into greased Bundt or tube pan. Bake 60-65 minutes, until toothpick or knife comes out clean. Cool on a wire rack. Remove.
